Cheesy Potato Soup Recipe

Super bowl is around the corner and everyone is hustling to find something to fix. With the weather outside being cold, soup might be
the way to go this time of the year. This recipe is easy and it’s satisfying.

  • 5 Lbs of red potatoes (or potato of choice)
  • 1 Box of chicken broth
  • 1 jar of real bacon bits
  • 1 Onion
  • 1 Can of cream of chicken
  • Cheese of your choice
  • Water
  • Butter – half a stick
  • Salt – to taste
  • Pepper – to taste

Directions:

Dice your potatoes into chunks or bite sizes and put into a pot big enough to hold all the potatoes, plus the liquids added. Put the
potatoes in the pot and fill the pot with water to just covering the potatoes.

Once the water warms up add your broth, cream of chicken soup, and butter. Once the soup starts to boil, reduce and let simmer until
done. salt and pepper to taste.

In a skillet dice your onions and cook until translucent. Once the onions are translucent add to the potato soup, then add your bacon
bits as well.

When the soup is done, when the potatoes are tender, add your cheese to the mix. Once the cheese has melted into the soup you are ready to
serve.

This recipe can be adjusted to fit your taste. Some add sour cream, others mash the potatoes once they are tender in the soup. Keep extra cheese and bacon bits to add to the top of your soup.

This is great served in a bread bowl. A warm and hearty meal for a great game day experience.

  1. I boiled 2 chicken thighs to make the broth. I then set the thighs aside to cool a little. I also cut real bacon into small pieces and cooked it in a skillet then added the onions and cooked until onions were translucent and added the diced, cooked chicken meat to the skillet for a few minutes. It added some nice flavor.

  2. I boiled three chicken broth cubs w/ 3 cups of water. I used the velveeta scalloped potato’s and boiled them in water then added 1 cup of milk and my broth. Im letting it come to a boil and then going to simmer for 10 min until potatos are tender. Then I will add my velveeta cheese and bacon bits and prob add green beans and carrots sound sooo yummy!
